Obviously the one to your right as you face the vehicle. The 2.8jtd (which I assume from the year) has two temperature sensors. One for the temperature gauge and warning light, the second for the ECU which controls the cooling fans. Both sensors are mounted in the thermostat housing area, to the vehicle LH end of the engine.
At 25 degrees C it would be typically 10K (10,000 ohms). A high temperature reading would be given by a low resistance, a very low temperature reading by an open circuit. Put your meter into OHMS function at the sensor pickup and at the end of the first join in the cable as it joins the loom or Abs circuit. If it shows an open circuit reading it's OK.
